- 1 Mandolin
Ingredients
- 1 Fennel Bulb reserve the fronds to garnish
- 2 Cups Arugula
- 3 Oz Shaved Parmesan
- 1 Green Apple Sliced Thinly
- 1 Lemon Juiced
- ¼ Cup Extra Virgin Olive Oil
- 1 Tsp Dijon Mustard
- Salt and Pepper
Instructions
Dressing
- Mix together the lemon juice, extra virgin olive oil, dijon mustard, salt and pepper. Stir until well combined. Set aside.
Shaved Fennel Salad
- Use a mandolin for best results. Cut the core out of the fennel bulb and shave the fennel into ⅛ inch slices. Add to a bowl along with arugula, sliced apple, and shaved parmesan.
