Grilled corn on the cob is a tried and true summer staple, but how about taking it up a notch with herbed chili butter.
Ingredients
Very few ingredients are needed to make this grilled corn with herbed chili butter. All you need is a medley of fresh herbs. I used chives, basil, and parsley which I was able to pick straight from my garden. Some butter, you can use salted or unsalted for this recipe. Chili powder and garlic powder to add some heat. And lastly, you will need fresh corn.
Tips for grilling perfect corn every time
- Choosing the right cob
- The first trick to the perfect grilled corn is picking the best ear at the grocery store. Feel free to peak at the kernels in the store and peel back the husk a little bit. During peak corn season, most stores will have garbage areas near by to dispose of the husks. To save time and avoid shucking more corn than necessary, you should look for corn with tightly wrapped green husks. Another indicator that the corn underneath is sweet and juicy is the presence of slightly stick hairs on top.
- Husk or no husk
- The second trick is to grill without the husk. Many people swear by cooking with the husks on first, and then shucking them before grilling a second time. What this essentially does is steam the corn first before it is grilled. I however, don't want to spend this much time steaming, then waiting for it to cool so that you can shuck, then cooking all over again. Grilling without the husk will also give you more beautiful grill marks. An important step because after all, you eat with your eyes first!
- Shuck the corn as quickly and as cleanly as possible
- Grab on to the silky tassels (or hair) with one hand and the bottom of the corn in the other. Pull down firmly all the way to the bottom. Discard the leaves and silk. Repeat until the entire corn is clean and run your fingers over the cob to catch any last silks.

- Preheat grill to high for the best results
- Just keep turning
- Getting the perfect amount of grill marks is an art form. And one that can only be accomplished by consistently turning the corn. Turn the corn every 2 minutes until every side has been cooked through. Roughly 10 minutes.

- 1 Grill
Ingredients
- 4 Cobs Corn
- 3 Tbsp Butter Melted
- 1 Tsp Chili Powder
- ½ Tsp Garlic Powder
- 1 Tsp Fresh Basil Chopped
- 1 Tsp Fresh Parsley Chopped
- 1 Tsp Fresh Chives Chopped
Instructions
- Preheat grill to high
- Shuck corn and carefully remove any silks
- Melt butter and chop herbs finely. Mix together in a small bowl with chili powder and garlic powder.
- Grill the corn, turning the cob constantly so that all sides are cooked through. Roughly 2 minutes per side
- Remove from grill and brush over herbed chili butter. Add salt to taste
